Rice with Anchovy
It is one of the first dishes that come to mind when talking about the Black Sea region. Rice with AnchovyFish is among the most sought-after flavors with the opening of the season. We present to you the recipe of this flavor, which is created by the combination of rice, which always shines at the forefront in Turkish cuisine, and anchovy, the star of the Black Sea.
Anchovy Rice Ingredients
2 kg. anchovies – sorted – 120 pieces
½ cup olive oil
2 onions – very finely chopped
2 cups baldo rice
Salt
Black pepper
1 teaspoon allspice
1 heaping tablespoon of dried mint
½ cup currants – soaked in water
1 tablespoon of granulated sugar
1 bay leaf
2 glasses of water
½ bunch of dill
Butter – to grease the bowl

4 slices of lemon

How to Make Anchovy Rice?
- Remove the middle bones of the cleaned anchovies.
- Wash it thoroughly in plenty of water, put it in a strainer and drain the excess water.
For rice;
- Place the currants in a bowl, add hot water and let them sit.
- Put olive oil in the rice pot.
- Add finely chopped onions and sauté until they soften.
- Add rice and continue frying.
- Add salt, black pepper, dried mint, allspice, drained currants, granulated sugar and bay leaf and mix a few times.
- Add water, cover the pot and let it cook over low heat.
- Finely chop the dill and add it to the cooked rice and stir once.
- Leave it to brew.
- Remove the bay leaf from the rice.
- 30cm. Grease your round aluminum bowl with butter.
- Arrange the anchovies back to back with the skin side down, making sure they are slightly on top of each other.
- Cover the bottom of your container with anchovies.
- Sprinkle with salt and pepper.
- Put the rice you prepared inside and cover it well with the anchovies hanging from the edges.
- Cover the rice with anchovies.
- Sprinkle salt and pepper on the anchovies and arrange lemon slices.
- Drop small pieces of butter on top and bake in a preheated oven at 180 degrees for 30 – 35 minutes until golden brown.
