Forest Kebab
We present to you the recipe of Orman Kebab, which has survived from Ottoman cuisine to the present day.
Ingredients for Orman Kebab Recipe
- Half a kilo of diced meat
- 1 kilo of peas
- 1 onion
- 1 teaspoon of pepper paste
- 1 teaspoon tomato paste
- 1 clove of garlic
- 1 tablespoon butter
- 1 large carrot
- 2 potatoes
- 2 green peppers
- Very little oil
- Salt, black pepper, chili pepper, thyme
- hot water
- Put the washed and drained meat in a heated pot and stir-fry until the water is absorbed.
- Add the chopped onion, garlic, butter and a little oil and mix.
- Add 2 cups of hot water and cook until the meat softens and absorbs its water. I cooked it in a pressure cooker. If you are going to cook it in a normal pot, you may need to add a little more water to cook the meat. Because cooking time may vary depending on your meat.
- Add tomato and pepper paste to the cooked meat, fry for a while, then add the chopped carrots and continue roasting.
- After adding the gutted peas and roasting them, add hot water to slightly cover them.
- Add salt and spices except thyme and mix.
- When the peas start to soften, add the diced potatoes and cook without letting the potatoes fall apart.
- Without removing it from the stove, add the chopped green peppers and cook for a few more minutes. Then, remove the food from the stove, add the thyme and mix.
- Close the lid of the pot, let your food rest for half an hour, and then enjoy it.
- I used beef, anyone can also make it with lamb. You can add any seasonal vegetables you like, zucchini and eggplant. What you need to pay attention to is that you add the vegetables to the pot in order according to their cooking time.
